  • 2 cups quinoa
  • 2 cups chicken stock
  • 2 cups water
  • ¼ cup butter
  • ¼ cup flour
  • 2 cups skim milk
  • salt and ground black pepper to taste
  • 8 ounces sharp Cheddar cheese, shredded
  • 4 ounces mozzarella cheese, shredded
  • 1 tablespoon butter
  • 1 large tomato, cored and sliced
