  • 1 (15 ounce) can garbanzo beans, rinsed and drained
  • 2 cups red or yellow teardrop tomatoes, halved
  • ⅓ cup chopped green bell pepper
  • ⅓ cup chopped red bell pepper
  • 1 small red onion, cut into 3/4 inch slices
  • 10 kalamata olives, pitted and halved
  • ⅓ cup basil pesto
  • ¼ cup balsamic vinegar
  • 1 tablespoon minced fresh rosemary
  • ¼ teaspoon black pepper
  • 4 ounces crumbled goat cheese
  • 1 head green or red leaf lettuce
  • ¼ cup toasted pine nuts
